Recovery system
The “Recovery system” is a technology exclusive to KOMA. The KOMA installation operates according to the KOMA TLR formula, under which a constant temperature, high air humidity and an adjustable, evenly balanced air circulation within the installation ensure that you will be able to condition the dough products with full retention of your characteristic product quality. At the same time it is important that all fresh products can be frozen rapidly, since this is the only way to ensure that your products will lose nothing of their taste and quality during the proving process.
The Recovery system is a semiautomatic dough conditioning process which makes it possible to separate the dough process from the baking process. The products can be baked off in smaller charges over a longer period a few hours after the first charge. By deciding to operate in this way you can postpone night hours spent on dough processing to times that are more personnel-friendly. Products are thawed out and conditioned slowly so they can be baked off directly in the oven or allowed to rise to the correct volume in the post-proving installations and baked off subsequently.
A constant level of quality is achieved by the use of the Recovery system, while at the same time the installation offers you the opportunity to make more efficient and more economic use of your additional proving installations and oven capacity.
It is here that the Recovery system forms a seamless connection with KOMA's fully automated dough conditioning installation, the KOMA Sunriser CDS. Using the Sunriser CDS a charge can be baked off immediately and then the installation itself can serve as an additional proving unit for products emerging from the Recovery installation.

Long proving times boost the taste – so says an old bakers' proverb! With of the recovery technology KOMA has developed a system that enables bakers to comply with that requirement:
Blast freezing dough pieces in the recovery installation
Storage
The dough pieces are conditioned to an optimum proving state by means of computer software control (e.g.+15°C)

The following versions of the installations can be supplied:
Internally Insulation panels in KOMA-Sendzimir electroplated white painted plate. Optional: air deflectors and air circulation sections in stainless steel.
Floor Insulation panels as standard with 1 mm foamed steel plate and 3 mm stainless steel plate floor.
Externally Insulation panels in KOMA-Sendzimir electroplated white painted plate with a 30 cm stainless steel bumper.
Insulation 80 mm or 120 mm thick polyurethane in sandwich construction as standard.
Refrigeration plant KOMA energy principle with semi hermetic refrigerating unit filled with
R 404 A, CFC -free coolant.
Dimensions Various model variants in segment dimensions of 300 mm available. Smallest dimension 1200 x 1200 mm (l x w), internally 2700 mm (alternatively 2400 mm) standard door of 900 x 2000 mm. This is the new KOMA recovery technology.
