The “Dough Freeze Storage System” is a technology exclusive to KOMA. The KOMA installation operates according to the KOMA TLR formula, by which a constant temperature, high air humidity and an even distribution of air in the installation ensure products can be stored over longer periods of time with retention of product quality. Also important is that all fresh products are frozen rapidly, since this is the only way to ensure that your products will lose nothing of their taste and quality during storage, even after longer periods of time.
Due to the special and ideal freeze storage climate in the installation it is less suitable for the processing of large charges of fresh products. The climate in the freezer needs to be disturbed as little as possible. If it is known in advance that the climate is likely to be disturbed frequently, a UVR or a UVD could be a more suitable installation. For large charges of fresh products it is wiser to have freezing take place in a KOMA blast freezer.
The installation is very suitable as a stock buffer for unpackaged products, so that there is no further need for you to make up small charges. Freshly introduced products are frozen rapidly to the core, which benefits the quality of your products.
With the use of this installation you achieve a constant quality, while at the same time the installation enables you to make more efficient and economic use of your dough preparation process. The dough products produced in stock in this way can be thawed out directly from the cold storage room or be proved via the KOMA Dough Conditioning System and then baked off.
