A constant temperature, an equal circulation of air and the correct relative air humidity in the console are of essential importance in order to be able to store bakery products or other foodstuffs in an optimal way at a temperature of -20°C for longer periods. It is also important to ensure that all fresh products are frozen rapidly, since only then can you be certain your products will lose nothing of their taste and quality during storage, even after longer periods of time.
In the "H-80/20-System" KOMA offers you an installation with which you can freeze your products at a temperature of -38°C and simultaneously store products at a temperature of for instance -20°C. As soon as the blast freezing section has been filled with products and blast freezing has been started by pressing the blast freezing button, 80% of the total freezing capacity is available for blast freezing, while the remaining 20% capacity ensures the temperature in the storage spaces remains constant. The blast freezing time can be programmed individually, while at the same time a strictly controlled air circulation ensures a high freezing rate. An exceptionally low air circulation and high air humidity in the storage spaces simultaneously ensure that your unpackaged products cannot desiccate. All installations can be connected to the TeleGuard remote monitoring system, worldwide - 24 hours a day - 365 days per year. In this way any defect that might arise in your installation(s) can be recognized at an early stage and be remedied via TeleGuard in appropriate cases.
KOMA MONOCELL AT computer control: The benchmark for operational safety
The MONOCELL AT computer controls and regulates all the technical refrigeration processes of your KOMA installation using CPU software developed by KOMA. This ensures that the highest possible blast freezing freezing/storage capacity is available at the lowest possible rate of energy use. The user also has large amounts of extra data and programming options available to him, such as:
- The number of operating hours clocked up on the compressor
- The situation in the freezer installation
- Whether or not one or more doors are open
- Defect reports
- Computer controlled air circulation
- Programming of blast freezing and storage temperatures and blast freezing times.
- Programming of the evaporator defrosting process (time controlled)
- Connection to the KOMA TeleGuard remote monitoring system.
